Lick the bowl worthy, Baked Potato Soup!

That's right, you read it...you will be licking your bowl clean of this soup, I promise!

Oh-- But first, I must share....my Rainbow Shot:

Pretty amazing...saw this baby as I was walking out of Michaels...
with my new cupcake decorating tools in hand! YES!

Let's get down to the nitty gritty, here is the goods for this:

 Scrumptious Baked Potato Soup
7-8 small to medium size potatoes
1 clove garlic
1 small onion
4 strips of bacon
3 tablespoons of flour
1/2 t. dried basil
1 t. pepper
1 t. salt
3 cups chicken broth
1 cup half-and-half cream
1/2 t. hot pepper sauce
Shredded Cheddar cheese

Start with your potatoes. Bake them in the oven as you would a baked potato.
Set aside and let cool.

In a large saucepan, cook bacon until crisp. Drain, reserve 1 tablespoon drippings.
Set bacon aside.

Saute onion and garlic in drippings until tender.
(don't mind the bacon in there..it was stuck to the bottom of the pan)

Stir in flour, salt, basil and pepper; mix well.

Gradually add broth.

Bring to a boil; boil and stir for 2 minutes.

Peel and Cut up your potatoes
(while your letting your broth come to a boil)

Add the potatoes, cream and hot pepper sauce.

Heat through but do not boil.

Garnish with bacon and cheese!
(the Best part ever)
And I guarantee you will lick this bowl clean
after going back for seconds of course!

Serve with sourdough bread.

Enjoy!

  27. I couldn't wait until after dinner to comment on this. Wow! This is amazing!!! My husband really does not care for soup and he can't stop raving about it. So creamy (Which is what did it for him) and a lot of flavor. I didn't used the hot pepper sauce as I didn't have any. but it's amazing. (P.S. I deglazed my sauteed onion and garlic bacon grease goodness with some white wine so every little bit of yummyness went into the soup. Oh ... This.. is.... good.
