Poppy Seed Chicken Casserole
Let's talk Dinner. Dinner is tough. Especially when you are running across town getting kids to this and thats! Right? -- This is when I come in with my super tube socks ... to Save the Day!

Poppy Seed Chicken Casserole is one of my family favorites! If we like it, you may..so I must share!


RECIPE:
2 cans cream of chicken soup
1/3. c milk
1 cup sour cream
1/3 chopped onion
2 t. butter {I used olive oil}
1/2 c freshly grated parmesan cheese
3 breasts cooked chicken {I used a rotisserie chicken}
1 Large bag cooked egg noodles {extra-wide}
1 roll crushed Ritz crackers
1/3 c. melted butter
2 t. poppy seeds

Saute onion in butter or olive oil. Shred chicken and add to onion. Combine soup, milk, sour cream and cheese; heat until cheese is melted.

Add onion and chicken. Cook noodles according to package. Spray a 9x13 glass pan with nonstick spray. Pour chicken mixture over the noodles. In a separate bowl, combing crackers, melted butter, and poppy seeds. Sprinkle over chicken mixture and bake at 350 degrees for 35 minutes.



Now we are Poppy Seed a Talking! Your kiddos will think you are the best baker/cooker/mom on the planet! This makes great leftovers... tupperware some up for the husbands lunch- yep- done!
