Breakfast for Dinner {The new way to celebrate Cinco de Mayo}


Breakfast for Dinner? Yes please! I am always running out of dinner ideas, and  seem to forget about the good old fashion "breakfast for dinner" -- so while others were celebrating Cinco de Mayo with tacos on Sunday, the Marrs were chilling in their P.J.s grubbing on some breakfast! Can't beat that!

Take a look at that spread aye? You name it, we had it! I even got crazy with a new recipe from I Can't Believe It's Not Butter! Did you all know that this buttery spread has less than 70% less saturated fat than butter? Yep. True! It also contains no hydrogenated oils and is made from a blend of vegetable oil, and-and-and- gluten free!  Back to the amazing fun recipe I recreated from their website!



Toast & Egg Muffin Cups 

-2 Tbs I can't believe it's not butter spread
-6 slices of whole grain bread crusts removed
-2 ounces of ham {I used bacon}
-3tsp cheddar cheese
-4 eggs


Preheat Oven to 350
Line 6 muffin tins with paper liners


Butter each side of the bread


Press the bread down in the paper liners


Mix together eggs, bacon/ham and cheese
Scoop the mixture into the bread
Bake for about 20 minutes until the egg centers are fully cooked.


All done! My boys actually really enjoyed these! I love how "fancy" they look being individually cooked! How perfect would these be to serve at Easter, Baby Showers or Mother's Day?


We are big fruit eaters over here as well. So adding some fresh fruit to the table is always a great idea. I think the table is set, let me yell at the family to come one, come all...let's get our Breakfast grub on in our P.J.s y'all!

  2. I seriously love having breakfast my dinner {my hubby...not so much} so this is right up my alley. I love the little muffin cups...great idea to use bread!

  7. Nothing like breakfast for dinner - especially on a weeknight when you're in a pinch for time. My go to dinner when I'm on my own (rarely these days) is a mushroom omelette - yummy.

    I like the look of these "muffins" - perfect for a brunch too.
