The mother loads of casseroles: Mexican Surprise

Hello! Sorry to be somewhat MIA...but ladies and gents it is a nice kickin' 88 outside...I have been lounging in the sun sun {you can't blame me right?} I did however manage to get my lazy bootie to take some photos of dinner last night! This recipe is the Mother Loads of all Mexican Casseroles:


Mexican Surprise. yum 




The Goods
3 cups cooked rice
1 1/2 lb ground beef
1 cup chopped onions
1 pint sour cream
Large bag of tortilla chips
16oz. jar salsa
1 pkg. enchilada seasoning
31 oz. can refried beans
15 oz. can of tomato sauce
3-4 cups grated cheese
1 can sliced olives
9x13 pan


Layer 1: Cooked Rice
Layer 2: Heat on stove refried beans, tomato sauce and enchilada seasoning. Then spread over rice.
Layer 3. Brown meat and onions, drain fat and spread over sauce.
Layer 4. Sprinkle 1-2 cups grated cheese.


Cover with foil. Bake at 350 degrees for 20-25 minutes.


Remove foil. Top with crushed tortilla chips, and then remaining cheese. Place back in the oven until melted. Garnish with sour cream, olives and salsa! 



Doesn't get much better then that! Enjoy!

    1. check the seasoning...(just in case you are new to being gluten free), many
      of them use wheat starch as a stabilizer.
