Creamy Chicken Enchiladas

Another Scrumptious Recipe..from My Mom's Kitchen of Course!
I always ask my kiddos and hub for a dinner choice each week
(I find it impossible to come up with 7 meals all on my own)

So the Hubs loves his Mexican Food
(can't blame him)
He also Loves this Dinner...so much that he requested it once again! 
So I thought I would share it with you!



Creamy Chicken Enchiladas
Yep those are the colors of the Mexican Flag (Dork? Maybe)

4 Boneless Chicken Breasts 
2 cans cream of chicken soup
1 cup sour cream
1 cup salsa
1 onion
1 can diced green chilies
1 can sliced olives
1 package of Monterrey Jack/Cheddar (The Mexican Blend) whichever you prefer
8-10 flour tortillas

Cook your Chicken, let cool and chop up and set aside.
Mix cream of chicken soups, sour cream and salsa together in a bowl.
Chop up your onion, open your canned chilies and olives. 
Get your cheese out as well.

Put a couple of spoonfuls of the soup mixture on the bottom of the 9x13 casserole dish. Spread it around. (Just so the tortillas don't stick to the bottom)

Next, grab your tortilla, put a spoonful of the soup mixture in the middle, chicken, onion, chilies, olives and a little cheese. 
Roll it up and place in the pan.

When you have them all made up, Spread the remaining soup mixture on top! Sprinkle the remaining cheese!

Bake at 350 degrees for 45 mins.
Top with sour cream, avocado, salsa, or hot sauce if you would like!
Enjoy!


**These are great to make ahead, refrigerate and pop them in around dinner time!

  2. Those look sooo good. I make similar enchiladas with beef instead of chicken and cream cheese and salsa instead of soup. I will have to try this sometime..
